Pure elegance
Since the 19th Century there has been little argument over which is the most sublime of all dessert pears, the Doyenné du Comice. Melting flesh, sweet, juice filled, and extremely aromatic, to find a ripe example is to discover the full potential of this incredible family of fruits.
Only by working closely with some of our most trusted farmers, the Bentley’s of Castle fruit farm in Newent, can we receive the fruit at the absolute level we require. Their care and focus allows the trees to produce an unmistakable perfume for us to preserve.
Gently crushed the whole fruits are slowly fermented. An inordinately careful extraction in the distillery provides a distillate of great fineness and complexity.
A fine nose redolent of orchard blossom and sweet, just cut flesh of Doyenné du Comice pear. It is bright and very much alive. To taste it is beautifully perfumed, spiced, full soft blossom, fresh, rich and juicy pear, gentle sweetness with fine hints of wood, flesh and skin.
