In the orchards that spill away from the iconic chain of the Malvern Hills we find a landscape that is perfectly suited for the cultivation of our richly scented blackberries.
Every single berry is picked, sorted and cleaned by hand. Gently crushed by their own weight, a slow wild fermentation brings just enough alcohol to carry and preserve the essence of these jewel like fruit. With over 22kg of fruit in each litre, scent and flavour connect us not only to the landscape but act as a record of transient days and fleeting harvests.
The nose has great concentration. It is filled with rich blackberry, crushed blackberry leaf, hints of peppermint, almond and touches of woodsmoke, exhibiting an almost Autumnal warmth.
The palate begins with delicate herbaceous notes with hints of mint. Rich blackberry reveals itself underscored with effortless weight and drying notes of almond and decaying wood. It develops with a lifting perfume of pure fruit supported by elegant acidity. This concentration brings wonderful length and evolution.
