Of English hedgerows & blossom

We are surrounded by an idyllic landscape that manages to be both beautiful and ideal for the cultivation of expressive fruit. Just two dozen miles from the distillery on the lime rich soils of Newent we have wonderful partners in the Three Choirs Vineyard.

Exceptionally aromatic, Bacchus has marked itself out as one of the most influential grapes to be grown in the UK. It expresses the English countryside and the flower filled hedgerows amongst which it thrives.  With a highly intricate aroma, good acidity and moderate sugar levels we highlight how our terroir is capable of producing distilling grapes of great quality and distinction. Hand picked, gently pressed, the skins are wild fermented and distilled in our bain marie still as with the finest marcs and grappa.

Exploring the aroma we find ourselves enveloped in a nose of dusty elderflower and melon, herbaceous with hints of nettle, hay and delicate sweetness. On the palate it is soft and filled with ripe melon and layered vegetation, floral with honeysuckle and rose, touches of humus and spice. Its complexity grows and evolves throughout tasting.

The effort, research, planning and toil invested in these tiny batch vintage expressions of single fruit varieties is astounding, with every sip revealing something thought provoking and new. A personication of time and place that represents much more than just a bottled spirit
