Bewitching depth
The cherry has been an iconic fruit of the English orchard for many years. Our moderate climate brings both richness of flavour, excellent concentration with a foil of beautiful freshness.
The cherries for this sensational Eau de Vie come from a single orchard in Worcestershire. Penny, our chosen variety of black, sweet cherry, exhibits a stunning depth of flavour. Every single cherry is hand picked. Every fruit checked by hand. Wild fermentation with no additions. The stones that impart a structural weight to the finished Eau de Vie are sieved just before distillation to retain balance.
By working with respect, the result is the capturing of pure perfume; It carries elements of Spring, Summer and Autumn evoked in a single fruit. It is, we believe, the UK’s first ever Cherry Eau de Vie.
On the nose it is rich, soft, and enveloping. Deep flavours of black cherries, skin and flesh, underscores high notes of juice and flowers. Hints of almond bring the faintest touches of smoke against the freshest fruit.
On the palate there is extraordinary density; rich and coating, we are taken to unctuous juice laden flesh. Those high notes are brought to the fore. Hints of spice, reoccurrences of that darker fruit and almond add gravity to an effortlessly long finish.
